Ensalada de Camaron
Shrimp salad
Ingredients:3 medium size fresh and firm tomatoes
½ onion
1 or 2 green fresh chiles jalapeno
Coriander the amount you like
Shrimps
1 or 2 Mexican green lemon
Salt
Tortilla chips or tostadas
Optional: Radish in small cubes.
The ingredients that don't have amount are to taste
Chop the onion, chiles and coriander, the tomatoes a little bigger than the others. Everything goes into a bowl, add the shrimps, if they are big can be cut in pieces as big as the tomato, salt and lemon to taste.
This is a very common botana in Chiapas and Oaxaca, Southern part of Mexico. It is commonly served with sort of Tortilla Chips, little tostadas or totopos (regional tostada). Also, the chile that they use, is "chile mira pa'rriba" sort of small chile guero that grows with the tip upwards, but in this case chile jalapeno goes very nice as well.
After two or three hours of been prepared this salad, you will find in your bowl a delicious juice, that can be drink in tequila glasses. Both the salad and the juice go well with beer or tequila.
Tip:
If you have unexpected guest, and you have everything but you are missing the shrimps,
you can substitute them by a can of tuna, it will be a nice and fresh botana.
