Camote en Tacha

Yam with piloncillo syrup
Ingredients:

1 kilo Camote blanco o morado.
Piloncillo
Optional: Cinnamon sticks.

Wash the yam perfectly well, since you will cook them with skin. Cut them in thick slices and place a layer of yam and some pieces of piloncillo, then another layer of yam and end with piloncillo. Between layers if you like the taste you can add some cinnamon sticks.

Add water, the amount of water depends on how thick you want your syrup. I personally add a little more because I love this syrup.

When the yam is cooked, place them in a nice bowl and let them cool down. It is delicious if it has been in the fridge few hours before you serve it. It is nice to eat it with cold milk.

Note:
The same recipe goes for Calabaza en Tacha, just substitute the yam for pumpkin.
