Mi Pollo Pibil.

My Chicken in Achiote sauce

It is mine because I don't prepare it in a conventional way, but it tastes very good.

Ingredients:

1 chicken in pieces
1 regular size tomato boiled and peeled
Achiote
1/4 onion
garlic
salt
cider vinegar Orange juice

In a glassware or any other form to be used in the oven, place the chicken in pieces, with skin or without, leave a little of the fat, since it will be the only fat to cook the sauce.

In the blender; the rest of the ingredients, the amount of cider vinegar and orange juice are to taste, you can start with little amounts and add little by little later. It is a smooth sauce, so it must be well blended. Add the sauce over the chicken, it must be enough to cover it.

It can be prepare early in the morning and take it into the oven one hour before your dinner, or you can prepare it just at the moment. Cover the form with tin paper and cook in the oven in medium-heat, until it is ready.

Notes:
The original recipe is with boneless chicken, and meant to prepare tacos suaves, soft tacos, with corn tortilla, as I don't have the opportunity to get them in the place I am living in now, I prepare it like a stew to serve with white rice, lettuce salad with sliced radish and refried beans.
If you like red onion, few hours before your dinner, slice one thinly, add cider vinegar, salt, oregano, thyme and a bay leaf, let it rest until your dinner, and you can place it as a side dish as well.
