Tortitas de Atun con Salsa de Tomate
Tuna fish Tortitas with Tomato Sauce
Ingredients to prepare the tomato sauce:- 300 gram. ripe tomato
- 1/2 onion in stripes
- l garlic
- dry oregano
- salt
- oil
Optional: Canned chile chipotle en adobo.
Ingredients to prepare the tortitas:
- 1 kg. cooked and peeled potatoes- 1 can tuna without water or oil
- 2 eggs
- 1 table spoon flour
- salt and pepper
- oil to fry the tortitas
Optional: grated queso anejo to taste.
To prepare tortitas:
Mash the potatoes, add the tuna in little pieces, the yolks, the flour, the cheese, and salt and pepper and work with this to get a firm paste. If it is needed you can add flour.
Mix the white of eggs to get firm and add to the potatoes, work the paste just a little to mix well.
Form circles about 6 cm. by 1.5 cm. thick and fry them with medium low heat. When dark golden are ready. Place them on kitchen paper to absorb the oil.
To prepare the sauce:
Prepare a puree with the tomato, garlic, chipotle to taste, and some of the small stripes of onion. Saute the rest of the onion in a pot, and add the puree, fry well, add water if it is needed to get a nice sauce. Add the oregano and salt, if your tomatoes are a little sour add a bit of sugar.
Serve this tortitas in a bed of beautiful lettuce leaves and the sauce on top.
