Salsa de Chile Chipotle.

Chile Chipotle Sauce
Ingredients:

3 medium size fresh and ripe tomatoes, stewed and peeled
1/4 onion
1 garlic
1 or 2 canned chiles chipotles
Oil
Salt and Oregano

In the mixer: Tomato, onion, garlic, and canned chipotle, add little water the consistency of a sauce.

This salsa doesn't need to be too smooth so you can use the lowest speed. If you peel the tomatoes is better, but if you like it a little rustic, you can easily leave them with skin.

Fry the mix in a pot with one spoon of oil, when it starts boiling add salt and oregano, or you can use as well, marjoram, or thyme, or a mix of all of them. If your tomatoes are a little sour, you can add just a bit of sugar.

If you will use it for tacos or fried eggs, it is better a little hotter, but if it is to eat just with tortilla chips it is better not too hot.
